I would sugges a couple of pointers: Be sure to get retro-fitted fixtures so they will fit into the space between kitchen ceiling and upper floor's subflooring. They have a lower profile and don't require as much height. Locate your ceiling beams with a stud-finder before you cut your holes. Then space out your light placement accordingly. What will be you power source? Are you coming off an existing fixture mounted on the ceiling? Make sure you don't overload the circuit. Matching the textured ceiling will be a challenge. However, if you paint the whole ceiling after installation instead of just painting the patchwork, it will be far less noticeable.

Depending on the size of the can, you should be able to reach in the hole for the can and drill through a beam if necessary. Some construction will mount the drywall on furring strips that run perpendicular to the beams, in which case you can snake the wire under the beam. As for patching the ceiling, it really depends on the texture. If it is a popcorn texture, then you can find some popcorn spray at the paint supply. Other textures are usually slurried on which you can do by thining down joint compound and using a brush or trowel. It may take some work, but you can get it to blend well enough. Once painted, no one but you will notice.

The wiring isn't the problem, matching up the texture on the ceiling is next to impossible though. You might be better off removing the texture. Most texture will come down pretty easily if you spray it with water. Be careful though, in some older houses, the texture contains asbestos.

No. It is not that complicated. There are light kits, wires can run...but since I am no electrician and neither are you obviously...go to your local HomeDepot or Lowes store and ask for one. It's better to spend a little money and have it done correctly than to do it the way you guess, and burn your house down.
