Be sure to get retro-fitted fixtures so they will fit into the space between kitchen ceiling and upper floor's subflooring. They have a lower profile and don't require as much height.
Locate your ceiling beams with a stud-finder before you cut your holes. Then space out your light placement accordingly.
What will be you power source? Are you coming off an existing fixture mounted on the ceiling? Make sure you don't overload the circuit.
Matching the textured ceiling will be a challenge. However, if you paint the whole ceiling after installation instead of just painting the patchwork, it will be far less noticeable.
